You are going to a Japanese restaurant. After the usual preamble about the weather, you order some sake and a menu. You read the menu carefully, looking for something that will take at least an hour to make and another one to eat.

You don’t see anything interesting but you do spot a few things—a couple of appetizers, a main course, a dessert, and possibly even a drink or two. You have a choice here. Do you go with what’s available, maybe trying something else in case it is better? Many also have very limited menus so that they can give you only the best dishes from their kitchen. This means that if you want to enjoy really great food, you need to plan ahead and decide on what you want before you go.

If you are just looking for a quick meal, then you may prefer the fast-food style Japanese restaurants. I’m not saying that you should never go to a Japanese restaurant. I love Japanese food and I would happily spend hours eating it. But sometimes I just want a light dinner that won’t take up much time and I think my options are limited to the type of Japanese restaurants I mentioned above.

So, what do you do?

Well, first of all, you can’t always rely on the quality of the ingredients. In fact, you may find a lot of junk food in a typical Japanese restaurant. So, you may have to look at the price as well. A small meal will cost about $10–$15. That’s quite reasonable for a restaurant in Japan. It’s certainly enough to pay for your meal and maybe even a little pocket change left over to treat yourself to a nice glass of wine or beer after dinner.

A lot of people think that Japanese restaurants are extremely fussy about what they put on the menu. Well, yes and no. There are plenty of options but they tend to focus on items that are easy to prepare, taste great, and are reasonably priced. Also, because these places are busy, they need to keep prices low. Some of them charge less than $1 per dish.

Now, it’s important to note that not every Japanese restaurant has a wide variety of foods. For example, many Japanese restaurants specialize in making udon noodles.

There are lots of different kinds of udon noodle shops in Tokyo alone. You might end up visiting a place where they serve only one kind of noodle and it doesn’t matter whether it’s sweet, spicy, or plain. They all come out tasting exactly the same.

This may seem strange at first but it makes sense once you understand the idea behind it. Fat adds flavor, which helps people who are watching their diets. This is why you see a lot of Japanese restaurants giving you a list of ingredients to pick from. For instance, you might see “chicken,” “vegetables,” and “fat” listed on the menu. Then, depending on how much fat you want, they may either cook it with oil or water. If you want extra fat, they may add some sesame seeds.
